About Us
Subterranean Coffee was founded in 2012 by husband-and-wife team Gene and Kelsey Padigos with a simple goal: create a café that felt creative, welcoming, and deeply personal. What started as a love for coffee and community slowly became a space where culture, conversation, comfort food, and creativity could all exist together.
Inspired by Jack Kerouac’s The Subterraneans, the name pays homage to underground artists, poets, musicians, and creative communities that existed outside the mainstream — something that deeply influenced the spirit we hoped to build at Subterranean Coffee. That influence, combined with a deep love for 1990s independent culture, helped shape the atmosphere we wanted from the very beginning. The café was inspired by the kinds of places that once served as gathering spaces for artists, musicians, students, writers, skaters, and creatives — unpolished, genuine, and full of personality. We always wanted Subterranean to feel lived in rather than manufactured.
As the menu evolved over the years, so did our identity. Gene began incorporating more of his Filipino culture into the drinks and food — blending familiar café staples with flavors and recipes inspired by family, childhood, and Filipino comfort food. From specialty drinks to sandwiches like our Chicken Adobo Sandwich, many of our menu items reflect that blend of cultures and experiences that make Subterranean Coffee what it is today.
Since 2012, Subterranean has evolved into something much bigger than us. It has become a place shaped by artists, students, musicians, families, workers, night owls, and longtime regulars — people both young and old who gave the café its personality and soul. Over time, we stopped seeing Subterranean as something we simply “owned.” Instead, we began to see ourselves as caretakers of it — responsible for preserving the spirit that so many people helped create over the years.
That spirit is what continues to guide us today. Whether you’re visiting for your morning coffee, staying late for chess night or open mic, meeting friends, studying, or just looking for a place to feel comfortable, we hope Subterranean continues to feel like a space where everyone belongs.
More than anything, Subterranean Coffee is a reflection of community. We’re grateful to everyone who has supported us since 2012 and helped turn a small coffee shop into something living, creative, and constantly evolving.
